Chocolate filled doughnuts

Updated: Nov 17, 2021

The origins of doughnuts

The word “Donut” came from the 19th century. In the 19th century, Nederland people fried bread dough to eat. But because the middle part didn’t cook well, people started to put nuts in the middle. And from then, it was called “nuts of dough”. And as time passed, the name changed into “doughnut”

As a similar food as filled doughnuts, you can find the “sufganiyot” which is a Jewish doughnut. In Israel, people enjoy this during Hanukkah.

Documentation of our process

Our doughnuts are adapted from the video below. However, when coating the doughnuts in sugar, we added a few teaspoons of cinnamon to create cinnamon sugar.

Through our experiences, we see that when adding cocoa powder to a dough, it makes it harder to rise, as it has no gluten in it, reducing the overall gluten development. The cocoa powder also makes the dough a brown colour. This makes it harder to recognize if the dough is cooked when deep frying. Cut open one doughnut to test if it is cooked.
